Honey Roasted Carrots with Garlic & Thyme

A simple yet elegant side dish featuring premium Western Australian honey for a caramelized, flavorful finish!

INGREDIENTS

  • 500g baby carrots (or regular carrots, sliced)

  • 2 tbsp South West Honey (Jarrah honey for added health benefits!)

  • 2 tbsp olive oil

  • 2 cloves garlic, minced

  • 1 tsp fresh thyme leaves (or ½ tsp dried thyme)

  • ½ tsp sea salt

  • ¼ tsp black pepper

  • ½ tsp balsamic vinegar (optional, for extra depth)

  • 1 tbsp toasted almonds or walnuts (optional, for garnish)

METHOD

  1. Preheat the oven to 200°C (400°F) and line a baking tray with parchment paper.

  2. Prepare the carrots – Toss the carrots with South West Honey, olive oil, garlic, thyme, salt, and pepper in a bowl until evenly coated.

  3. Roast – Spread the carrots in a single layer on the baking tray and roast for 20–25 minutes, flipping halfway through, until caramelized and tender.

  4. Finish & serve – Drizzle with balsamic vinegar (if using) and sprinkle with toasted nuts for extra crunch. Serve warm as a delicious side dish.
