Honey Roasted Carrots with Garlic & Thyme
A simple yet elegant side dish featuring premium Western Australian honey for a caramelized, flavorful finish!
INGREDIENTS
500g baby carrots (or regular carrots, sliced)
2 tbsp South West Honey (Jarrah honey for added health benefits!)
2 tbsp olive oil
2 cloves garlic, minced
1 tsp fresh thyme leaves (or ½ tsp dried thyme)
½ tsp sea salt
¼ tsp black pepper
½ tsp balsamic vinegar (optional, for extra depth)
1 tbsp toasted almonds or walnuts (optional, for garnish)
METHOD
Preheat the oven to 200°C (400°F) and line a baking tray with parchment paper.
Prepare the carrots – Toss the carrots with South West Honey, olive oil, garlic, thyme, salt, and pepper in a bowl until evenly coated.
Roast – Spread the carrots in a single layer on the baking tray and roast for 20–25 minutes, flipping halfway through, until caramelized and tender.
Finish & serve – Drizzle with balsamic vinegar (if using) and sprinkle with toasted nuts for extra crunch. Serve warm as a delicious side dish.
