Caramelized Redgum Honey & Garlic Chicken

INGREDIENTS
500g chicken thighs or breast, cut into bite-sized pieces
2 tbsp soy sauce
1 tbsp apple cider vinegar or lemon juice
3 cloves garlic, minced
1 tsp fresh ginger, grated
1 tbsp olive oil
1 tsp sesame oil (optional)
1 tsp cornstarch mixed with 2 tbsp water (for thickening)
1 tbsp sesame seeds (for garnish)
2 tbsp spring onions, chopped (for garnish)
METHOD
Prepare the sauce: In a small bowl, whisk together Redgum honey, soy sauce, apple cider vinegar (or lemon juice), minced garlic, and grated ginger.
Cook the chicken: Heat olive oil in a pan over medium heat. Add the chicken pieces and cook until golden brown and cooked through, about 5-6 minutes per side.
Add the sauce: Pour the honey-garlic mixture over the chicken and stir to coat evenly. Let it simmer for 2-3 minutes until the sauce begins to thicken.
Thicken the glaze: Stir in the cornstarch mixture and cook for another minute until the sauce reaches a glossy, sticky consistency.
Finish and serve: Drizzle with sesame oil (if using), then sprinkle with sesame seeds and chopped spring onions. Serve hot with rice, noodles, or vegetables.
