Honey Lemon Cheesecake Bites
A bite-sized dessert with the perfect blend of creamy, tangy, and naturally sweet flavors from premium Western Australian honey!
INGREDIENTS
200g cream cheese (softened)
½ cup South West Honey (Coastal honey is a great option)
1 tbsp lemon juice
1 tsp lemon zest
½ tsp vanilla extract
1 cup crushed graham crackers (or digestive biscuits)
2 tbsp melted butter
¼ tsp sea salt
Fresh berries (optional, for garnish)
METHOD
Prepare the crust – In a bowl, combine crushed graham crackers, melted butter, and sea salt. Press the mixture into the bottom of a muffin tin or silicone mold to form a firm crust base. Chill in the fridge for 15 minutes to set.
Make the cheesecake filling – In a separate bowl, beat the cream cheese, South West Honey, lemon juice, lemon zest, and vanilla extract until smooth and creamy.
Assemble the bites – Spoon the cheesecake mixture onto the chilled crusts, smoothing the tops with a spatula.
Chill – Refrigerate the cheesecake bites for at least 2 hours or until firm.
Serve – Garnish with fresh berries or extra honey drizzle before serving.
