Honey Lemon Cheesecake Bites

INGREDIENTS

  • 200g cream cheese (softened)

  • ½ cup South West Honey (Coastal honey is a great option)

  • 1 tbsp lemon juice

  • 1 tsp lemon zest

  • ½ tsp vanilla extract

  • 1 cup crushed graham crackers (or digestive biscuits)

  • 2 tbsp melted butter

  • ¼ tsp sea salt

  • Fresh berries (optional, for garnish)

METHOD

  1. Prepare the crust – In a bowl, combine crushed graham crackers, melted butter, and sea salt. Press the mixture into the bottom of a muffin tin or silicone mold to form a firm crust base. Chill in the fridge for 15 minutes to set.

  2. Make the cheesecake filling – In a separate bowl, beat the cream cheese, South West Honey, lemon juice, lemon zest, and vanilla extract until smooth and creamy.

  3. Assemble the bites – Spoon the cheesecake mixture onto the chilled crusts, smoothing the tops with a spatula.

  4. Chill – Refrigerate the cheesecake bites for at least 2 hours or until firm.

  5. Serve – Garnish with fresh berries or extra honey drizzle before serving.
