INGREDIENTS

  • 4 cups cornflakes

  • ⅓ cup South West Honey (for a rich, natural sweetness!)

  • 90g unsalted butter

  • ⅓ cup caster sugar

METHOD

  1. Preheat the oven to 150°C (300°F) and line a muffin tray with paper cases.

  2. Melt the honey mixture – In a saucepan over low heat, melt the butter, South West Honey, and caster sugar, stirring until fully combined and slightly bubbling.

  3. Coat the cornflakes – Place the cornflakes in a large mixing bowl and pour the warm honey mixture over them. Gently stir to coat evenly.

  4. Scoop into cases – Spoon the coated cornflakes into the muffin cases, pressing down lightly to help them hold their shape.

  5. Bake – Bake for 10 minutes, then remove and let them cool completely. They will firm up as they cool.

  6. Enjoy! Store in an airtight container for up to a week.
