Classic Australian Honey Joys

INGREDIENTS
4 cups cornflakes
⅓ cup South West Honey (for a rich, natural sweetness!)
90g unsalted butter
⅓ cup caster sugar
METHOD
Preheat the oven to 150°C (300°F) and line a muffin tray with paper cases.
Melt the honey mixture – In a saucepan over low heat, melt the butter, South West Honey, and caster sugar, stirring until fully combined and slightly bubbling.
Coat the cornflakes – Place the cornflakes in a large mixing bowl and pour the warm honey mixture over them. Gently stir to coat evenly.
Scoop into cases – Spoon the coated cornflakes into the muffin cases, pressing down lightly to help them hold their shape.
Bake – Bake for 10 minutes, then remove and let them cool completely. They will firm up as they cool.
Enjoy! Store in an airtight container for up to a week.
