Hot Honey Burrito Bowl

INGREDIENTS

For the Hot Honey Chicken:

  • 2 large chicken breasts (sliced or diced)

  • 2 tbsp South West Honey (for natural sweetness!)

  • 1 tbsp olive oil

  • 1 tbsp hot sauce (adjust to taste)

  • 1 tsp smoked paprika

  • 1 tsp garlic powder

  • ½ tsp cumin

  • ½ tsp chili flakes (optional for extra heat)

  • Salt & black pepper to taste

For the Burrito Bowl:

  • 2 cups cooked rice (white, brown, or cauliflower rice)

  • 1 can black beans (drained and rinsed)

  • 1 cup cherry tomatoes (halved)

  • 1 cup corn kernels (fresh or canned)

  • 1 avocado (sliced)

  • ¼ cup red onion (diced)

  • ¼ cup fresh coriander (chopped)

  • ½ cup shredded cheese (cheddar or Mexican blend)

  • Lime wedges (for serving)

For the Hot Honey Drizzle:

  • 2 tbsp South West Honey

  • 1 tsp hot sauce

  • ½ tsp lime juice

METHOD

  1. Prepare the Hot Honey Chicken – In a bowl, mix South West Honey, hot sauce, olive oil, smoked paprika, garlic powder, cumin, chili flakes, salt, and pepper. Toss the chicken in the marinade and let sit for 10 minutes.

  2. Cook the Chicken – Heat a pan over medium-high heat. Cook the chicken for 5-7 minutes per side, until golden and fully cooked. Remove from heat.

  3. Assemble the Burrito Bowl – Divide the cooked rice into bowls. Top with black beans, cherry tomatoes, corn, avocado, red onion, coriander, and cheese.

  4. Make the Hot Honey Drizzle – In a small bowl, mix South West Honey, hot sauce, and lime juice. Drizzle over the burrito bowls.
